Birds Without Feathers Eat Well Together
Take a Tex-Mex approach to preparing your fresh or frozen and Ziploc’d waterfowl
By Mike Gnatkowski
MUSKEGON, Mich. (February 7, 2024) – If I had a dollar for every time someone told me they don’t like to eat duck, I’d have a nice little nest egg. When I ask them if they’ve ever tried wild duck, they reply, “Well, no, but I heard it’s greasy.” I’m not sure who started the greasy rumors.
After a successful hunt, you will likely have breast fillets or a whole plucked bird with any waterfowl. You can skin the bird, leaving the carcass, head, or wing attached for transport. Whether it’s breast meat or the whole bird determines how you cook it.
Breast fillets are the best way to deal with birds with many pin feathers, which are tiny immature pin-like feathers common on young of-the-year birds or plumage on older birds that have not fully developed yet. The last place where the immature feathers develop is under the wings or the back. If they are few, you can easily pull them out. Otherwise, you’re better off breasting or skinning the birds.
On our annual trip to the Prairie Pothole Region, we typically breast the birds we get the first few days because young birds are abundant with lots of pin feathers, and we need to eat birds to keep from having more than our possession limits. If we get a mature mallard of pintail, we’ll still pluck it, but otherwise, we breast them knowing that one of our early meals during the week will be Duck Fajitas. The recipe is quick and easy to make and is an excellent entrée after a long day in the field.

INGREDIENTS (Makes Four Servings):
1 1⁄2 pounds duck breast meat (cut into 1⁄2 inch thin strips)
1 tablespoon soy sauce
2 limes
1 bottle of beer
1 tablespoon olive oil
2 green bell peppers (cut into 1⁄2 inch strips)
1 yellow bell pepper (cut into 1⁄2 inch strips)
1 red bell pepper (cut into 1⁄2 inch strips)
1 large onion (sliced into rings)
1 package of 8 tortillas (8”)
Shredded cheddar cheese
Sour cream
Pico de Gallo:
4 chopped tomatoes
2 diced jalapenos (seeds removed)
1 small onion
6 sprigs fresh cilantro (diced)
1 tablespoon lime juice
In a large bowl, combine the Pico de Gallo ingredients and refrigerate for a minimum of 2 hours. Place the duck meat in a shallow glass casserole dish. Sprinkle with soy sauce and lime juice. Add enough beer to the dish to just cover the goose breasts. Preheat the gas grill or prepare your charcoal grill. Place the onions and peppers in a metal pie pan, and drizzle with the olive oil. Place the pan on the gas grill and cook covered for about 20 minutes or until the vegetables are tender. Remove the duck meat from the marinade and place it on the grill. Cook until rare to medium-rare on one side and turn over. Cook to your desired doneness and remove from the grill. To assemble, place a few strips of duck meat on a tortilla and top with the onion and pepper mixture, sour cream, cheddar cheese, and Pico de Gallo.
Stuffing is another way of utilizing large whole duck breasts. Lay a whole breast on the table and use a meat mallet to reduce the thickness by about one-half. Add a dollop of your preferred stuffing or wild rice. Lay a second piece of breast meat on top. Add a couple of half-strips of bacon or side pork over the fillets and roast for about an hour, taking care not to overcook them. Mix cherry preserves and some brandy to prepare a sauce to spoon over the duck before serving.

While at Shot Show this year, I had a great visit with an up and coming firearms manufacturer, Watchtower Firearms and its CEO Jason Colosky. Watchtower is a Texas based corporation with an impressive array of executive talent as well as a top of the line product portfolio.
I’ve been a 1911 fan for quite a few years and this year I had the opportunity to take a look at one of the more impressive 1911 offerings on the market. The Watchtower APACHE.
The APACHE is a 9mm double-stacked 1911 precision-machined from 4140 and 416R steel pistol. I absolutely loved the wide grip and texture. The trigger pull was crisp; breaking like a glass rod, at about 4lbs. All of the traditional 1911 accoutrements were brilliantly executed with an ambidextrous safety selector. WATCHTOWER uses a proprietary PVD (physical vapor deposition) coating on the slide, barrel, frame, and all major components. Its PVD finish is a corrosion-resistant permanent surface finish that protects your pistol from exposure to foreign elements, including saltwater. The original 2023 offering was a limited production of 1000 pistols but the APACHE is now a full production offering with a M.S.R. P. of $3,990.

Planning, Programming, Budgeting and Execution (PPBE) Webinar
Thursday, March 7, 2024, at 1pm ET
What matters in DoD? If you tell me what’s resourced, I’ll tell you what matters.
DoD uses four distinct processes to manage department resourcing: Planning, Programming, Budgeting, and Execution. These processes, led by different groups with different incentives/priorities and levels of knowledge, skills, and experience, run simultaneously, while actions taken in one can ripple across to the others. Gaining an understanding of each process will provide context to WID and NDIA members as they pursue DoD business opportunities.
On Thursday, March 7, Col (Ret) Rachel McCaffrey, NDIA’s VP of Membership and Chapters and Executive Director or Women in Defense, will again share her PPBE knowledge and insights in a webinar exclusively for NDIA and WID members. Join her for an interesting, practical discussion of DoD resourcing.

HEADHUNTERS NW VIDEO PODCAST EXPOSES EXPORT BAN SURPRISES WITH GLOBAL DEFENSE’S CEO, JORDAN YOUNG
FEBRUARY 6, 2024 – Edgemont, SD – HeadHunters NW, the leading executive recruiting firm specializing in talent acquisition for the international small arms, shooting sports, and defense industries, presents the next episode of the HeadHunters NW Podcast recorded during SHOT Show 2024. Hosted by Shaylene Keiner, President of HeadHunters NW, this timely episode features an enlightening discussion with Jordan Young, CEO of Global Defense, addressing the recent export restrictions impacting U.S. firearms manufacturers and exporters.
Young, a specialist in global product exportation, heads Global Defense, a U.S.-based importer, exporter, and wholesale distributor of firearms, components, accessories, ammunition, and specialized equipment for commercial, military, and law enforcement markets.
Keiner underscores, “With no warning, the U.S. Department of Commerce paused processing commercial export licenses for 90 days in October of 2023. My conversation with Jordan in Episode #26 highlights these regulations’ negative impact on the industry’s economy, U.S. exporters, manufacturers, and countries worldwide.”
Keiner explained that foreign trade (exports) of semi-automatic firearms from U.S. manufacturers is essentially shut down. “Consider how detrimental that is for domestic companies, who generate up to 30 percent of their annual revenues from exports. The trickle-down from manufacturers is tremendous and hurts businesses, workers, and local economies. Jordan described rumors that more severe regulations are coming, and even valid, current export licenses will be pulled in addition to requiring end-user passport information.”
HeadHunters NW Video Podcast
· HHNW #026, Jordan Young, CEO, Global Defense, LinkedIn
Keiner emphasizes that this issue demands an all-hands-on-deck approach, urging individuals to proactively engage by contacting federal lawmakers and expressing opposition to the Department of Commerce’s export restrictions. Leaked documents from the Department of Commerce suggest severe restrictions on the exportation of semi-automatic firearms, compounding the urgency for immediate action. “Please share this episode with folks you know in the industry and Second Amendment community,” she added.

“We are excited to bring Al’s Goldfish Lures to Wisconsin, one of the bastions of sportfishing in America, where we can more closely connect with Midwestern anglers and develop the next phase in the seven-decade-long history of the company,” said Paul Check, Fin Rage Tackle owner. “At the same time, we pledge to remain true to the company’s northeastern roots. Al’s Goldfish Lures are famous for being deadly on sportfish species throughout America and the world, and our goal is to increase their effectiveness across the board.”
Moving forward, Check said that his goals include the development of new colors in the current Goldfish, 49er, and Helgy product lines, create new products and offerings for ice fishermen, and develop new product size ranges across the board to make the product line even more effective for a wide variety of fishing techniques.
“There is a different type of fishing here in the Midwest, specifically walleye, northern pike and musky, and the Al’s Goldfish products have proven successful over the years for these species,” Check said. “We intend to develop additional sizes and colors of Al’s Goldfish products to continue that long history of success.”
Consumers can learn about the new Al’s Goldfish Lure company at the Wisconsin Fishing Expo, to be held February 23-25 at the Alliant Energy Center in Madison, WI. Or, for more information about the company’s complete line of lures and accessory products, visit www.alsgoldfish.com/.
About Al’s Goldfish Lures:
Purchased by Fin Rage Tackle LLC, based in Green Bay, WI, in July 2023, Al’s Goldfish Lures was begun back in 1952, when Al Stuart developed a pioneering spoon and began marketing it through Stuart’s Sport Shop in Indian Orchard, Massachusetts. With the help of legendary fishing personality Gadabout Gaddis, the lure quickly gained popularity, and the company was off to the races. Today, all of the company’s lures are made of solid marine brass, are plated by a jewelry plater, and are hand-painted. All of the gold lures are plated in 22k gold, which makes them super shiny, then finished with top-quality components, so you don’t ever have to go home and put new hooks and rings on these out of the package! It’s all made in the USA and back with a “if you’re not satisfied, we’ll make it right by you” guarantee.

Big Horn Armory (BHA) Combats Bidenomics with Rollback on Two Popular Lever Action Models
BHA offers two of its base model lever action firearms at a lower price to give customers a more affordable option during these uncertain times.

Cody, Wyo. (February 2024) – With uncertainties in the economy, inflation, and oppressive regulations that drive prices of goods and materials higher than ever, Big Horn Armory (BHA), makers of big-bore firearms, has dedicated itself to finding ways to mitigate inflation while still offering high-quality firearms without cutting corners on materials or craftsmanship. Through strategic planning and hard work, BHA is pleased to offer two of its base model lever action firearms at a lower price to give customers a more affordable option during these uncertain times. Starting Feb. 1, 2024, the base configuration of the Model 89 will be priced at $3,499.00, and the Model 89 Black Thunder will be priced at $3,699.00, which is a $1,000 drop from its previous price.
“I am proud to announce our commitment to the 2A community and our dedication to navigating the challenges of today’s uncertain economic landscape,” commented Greg Buchel, founder and president of Big Horn Armory. “We refuse to compromise on the quality of our big-bore firearms, and our Reverse Bidenomics Rollback is a testament to our mission to provide our customers with affordable, top-tier firearms.”
The Model 89 lever-action rifle in .500 S&W Magnum continues the rich legacy of American firearms design and development. Built from the ground up and solidly engineered using the latest CNC technology, the Model 89 embodies the best of the old Model 86 and the Model 92 lever-actions in a modern platform capable of handling the powerful .500 S&W Magnum. It is manufactured with 17-4 stainless steel precision machined and properly hardened to deliver consistent downrange performance and rugged in-the-field dependability.

The selected American black walnut stock and forend are fitted with integral front and stud rear sling swivel mounts. The pistol grip buttstock has a one-inch recoil-taming pad. Stock and forend are given several coats of a durable synthetic satin finish. It is equipped with aperture rear and post-front sights. The Model 89’s large, hunter-friendly curved lever enables ease of operation, especially with gloved hands. Honoring the long tradition of great American sporting rifles, the Model 89 provides hunters with pride in ownership and a powerful advantage afield.
The Model 89 Black Thunder is BHA’s first tactical lever-action rifle. Designated the Model 89BT, Black Thunder is optimally sized, perfectly configured, and chambered in powerful the .500 S&W Magnum. With its short 16” trapper barrel, it is a quick-handling, rapid-shooting carbine that is perfect for hunting, home defense, or survival situations.

The new Model 89BT’s robust design includes stainless-steel construction, heat-treated and coated with a black nitride finish, making it nearly impervious to corrosion. Black laminate stocks add strength and additional weather resistance, as well as no-nonsense aesthetics. The Model 89BT comes from the factory with hand-crafted, quality Skinner rear aperture adjustable sights, as well as, a factory-installed Scout Scope Mount rail perfect for Scout Scopes, red dot, or holographic sights.
To maximize the Model 89BT’s capabilities, it features an M-LOK rail on the front of the forend to mount lights, laser sights, or any other accessory. This provides an option for adding low light capability for appropriate hunting situations or decisive personal defense tools if needed. It also includes an energy-absorbing one-inch Pachmayr Decelerator butt pad, a tank-style muzzle brake, and a fiber optic front sight.
The .500 S&W Magnum chambering lets the Model 89BT shoot loads from 200 grains to a truck-stopping 700 grains. This incredible weight range, combined with the availability of almost any style and type of bullet imaginable, makes the Black Thunder capable of taking any game animal walking the planet.

Big Horn Armory was founded in 2008 with the expressed intention of designing a Browning-type lever-action gun chambered in 500 Smith & Wesson Magnum. The Big Horn Armory Model 89, made in America, closely follows the work of John Browning with refinements courtesy of modern metallurgy and machining capabilities. The first rifles began shipping in September of 2012 and since then, BHA has added to their big bore lineup with a Model 90 Carbine in 460 S&W, the Model 90A in 454 Casull, the Model 90B in .45 Colt, the Model 89A in 500 Linebaugh and the Model 89B in .475 Linebaugh. Excerpt from the Summary:
“ For unmanned aircraft, including unmanned aircraft operating under 14 CFR part 135 that are authorized to use the inspection rules in part 91, this proposal would enable the selection of either an inspection program recommended by the manufacturer or a program established by the registered owner or operator and approved by the Administrator. The FAA believes this change would enhance safety and would provide unmanned and single-engine turbine- powered aircraft owners and operators with greater flexibility with aircraft maintenance. Additionally, for aircraft operating under part 91, subpart K, fractional ownership rules, the FAA proposes to lengthen the reporting interval for aircraft mechanical reliability reports from 72 to 96 hours and to allow electronic report submissions. This would align the reporting interval requirement with those found in other regulations (e.g., 14 CFR 121.703, 135.415, and 145.221). Finally, the FAA proposes several changes to clarify and simplify various maintenance-related regulations in areas that have confusing or ambiguous.”

GA-ASI DEMONSTRATES A2E CONCEPT WITH AFSOC
SAN DIEGO – 05 January 2024 – During a series of demonstrations in December 2023, General Atomics Aeronautical Systems, Inc. (GA-ASI) and the U.S. Air Force Special Operations Command (AFSOC) worked collaboratively to execute several capability demonstrations as part of the Adaptive Airborne Enterprise (A2E) concept development.
The first demo featured the simultaneous control of three MQ-9A remotely piloted aircraft (RPA) by a single crew using the government-owned AFSOC RPA Control Suite (ARCS). ARCS adds additional capability to the Ground Control Station (GCS), by allowing a standard crew to control multiple UAS platforms. The second demo showed that an MQ-9A can launch a Altius 600 from a launch pod.
“We have established a great partnership with AFSOC,” said David R. Alexander, president of GA-ASI. “We know our RPA will be a key building block for AFSOC to achieve its A2E vision.”
AFSOC is acquiring MQ-9B from GA-ASI for rapid prototyping and will forego a traditional GCS to control the RPA. Rather, AFSOC intends to control both the MQ-9A and MQ-9B aircraft, as well as a family of small UAS, from the ARCS. This event demonstrated the viability of ARCS to control the MQ-9A platform, which will lay the foundation for future work to integrate the MQ-9B aircraft into ARCS. This event also demonstrated the viability to operate the MQ-9 platform as surrogates for small UAS, all of which will be controlled by ARCS.
“These demonstrations were what we needed to really start to make A2E a reality,” said AFSOC Col. Trey Olman. “This was the first time we were able to demonstrate control of multiple RPAs from a single workstation, which is important in reducing manpower requirements.”
The A2E demonstrations took place at Cannon Air Force Base, N.M. and Melrose Air Force Range (MAFR), N.M., and utilized Satellite Communications (SATCOM) Launch & Recovery (SLR). AFSOC launched the three MQ-9As using GA-ASI’s Portable Aircraft Control Stations (PACS) and Ground Control Stations. Once airborne, control for the three MQ-9A was handed from the three GCS to a single ARCS workstation. Control of all three aircraft was handed back from ARCS to each GCS and the three aircraft performed SATCOM landings via GA-ASI’s Automatic Takeoff and Landing Capability (ATLC).
The A2E concept envisions AFSOC projecting air power from beyond the horizon, using a family of large, unmanned aircraft along with small, expendable UAS, from permissive to denied environments. MQ-9B is the ideal platform for inserting air-launched effects into potentially hostile environments. The MQ-9B’s combination of range, endurance, reduced manpower footprint, and overall flexibility will key to AFSOC’s future family of advanced UAS systems.

A Side of Trivia to Go with Your Chili
*A green chili pod has as much vitamin C as six oranges.
*Some cultures put chili powder in their shoes to keep their feet warm.
*The first chili cook-off occurred in 1967 in Terlingua, Texas, a border town about 400 miles west of Chili’s alleged birthplace, San Antonio. It ended in a tie between a native Texan and a New Yorker, but chili cook-offs are still held there today.
*Hot chili peppers burn calories by triggering a thermodynamic burn in the body, which speeds up the metabolism.
*Chili pepper color is a function of ripeness. Green peppers are usually not fully ripe, and the same pepper could be green, yellow, orange, or red, depending on its level of ripeness.
*According to Wikipedia, the first documented recipe for chili con carne is dated September 2, 1519.

While at Shot Show 2024, I spent some quality time with Outdoor Edge. The company is the leader in replaceable blade knives and a trusted source for quality outdoor knives and tools. They have an edged offering for any occasion; if you’re a hunter or outdoorsman, you’ll find everything you need at Outdoor Edge, and it won’t break the bank. They recently announced the Razor VX EDC folder which has a replaceable blade, but what intrigued me most was their claim that you’ll never need to sharpen your knife again.

Revelyst Outlines Progress on GEAR Up Transformation Plan
02/02/2024
The leading house of outdoor brands provides an update on the program designed to drive profitability and growth.
ANOKA, Minn.–(BUSINESS WIRE)– Revelyst, a collective of world-class maker brands that design and manufacture performance gear and precision technologies, today announced an update on its GEAR Up transformation initiative. Revelyst, a segment of Vista Outdoor Inc. (NYSE: VSTO), is in the process of separating into a standalone public company, with an expected execution date later this year. As part of this process, Revelyst is working to unlock its potential by directing resources to better meet consumer demand, synergizing and prioritizing strength in supply chain, and doubling down on the equity and innovation of the company’s industry-leading brands.
Revelyst launched GEAR Up in the fiscal third quarter, quickly actioning the plan to simplify the company’s business model, deliver increased efficiency and profitability from that simplified structure, and reinvest in its highest potential brands to accelerate growth and transformation. These actions are in motionand will have an estimated $100 million of realized annual cost savings by fiscal year 2027. This is in addition to the previously announced $50 million cost restructuring program, of which $25 million in savings was specifically related to Revelyst, for a total of $125 million in expected run-rate cost savings.
The company continues to make progress on GEAR Up and is executing against the previously outlined goals. GEAR Up actions announced today include:
Expanding select roles to take on cross-brand scope as the company identifies synergies across each platform.
Bringing together teams at dedicated platform locations to drive the culture necessary to achieve brand goals.
Eliminating duplicative roles as the platforms consolidate.
As part of these measures, the company will close offices in Petaluma, California; Overland Park, Kansas; Eagle, Colorado; and Madison, Mississippi. Revelyst is consolidating teams across core locations, including:
The Adventure Sports platform, led by Jeff McGuane, will consolidate in Irvine, California.
The Outdoor Performance platform, led by Jordan Judd, will consolidate in Bozeman, Montana.
And the Precision Sports and Technology platform, led by Jon Watters and Scott Werbelow, will consolidate in San Diego.
“While our business is stable, headwinds exist, and we need to make changes to grow and meet the financial plans we’ve established and believe in,” said Eric Nyman, CEO of Revelyst. “Our bold and decisive actions to unlock the potential for Revelyst have us on the right path. Previous ways of working need to be challenged and adjusted to position us to where we aspire to be.
“The decisions to close offices and reduce headcount aren’t taken lightly, and though they are intended to position us for the future, we understand that they are difficult in the immediate,” Nyman continued. “I have incredible confidence in our ability to transition through this and gain strength because of it. GEAR Up is an integral component for transforming Revelyst into the world’s No. 1 house of brands.”
